I wanted to stop in and see how everyone was doing this week. I have been working everyday, and since Pete has been off work because it has been slow, he has come to work with me and we have had a good time watching movies and playing cards and board games. It has been really slow at the hotel also. I am sure it will pick back up after the new year, but for now, I think I have checked in a total of 10 people all week…lol. Shelbyville isnt a real big town. I will have a 4 day weekend finally though and I am looking forward to that. Has anyone made any New Years resolutions yet? I always make them but then come Februrary I forget what it was and that is the end of it…lol. I love to hear about all the snow you girls are having, we havnt seen any yet here in our part of Kentucky. But they say by New Years day, the temps are supposed to drop dramatically and we might see some then. I think this global warming thing has pushed our winter weather into the next month…hmmm…maybe. The days are flying by…I never have enough time in them to get everything done. It seems once the day gets started, I get to check a few emails and have a cup of coffee and then I am off in a rush and dont stop until midnight. I really need a few days off, maybe once the holidays are over and things slow down at work, I will plan on a long 4 day weekend..lol.
Boy the wind is blowing this morning. I woke up and all the christmas decorations are blowing and bending in the wind. My wreath on the door is hanging on for dear life and poor frosty in the yard has decided to lay down and forget it. It is 43 degrees here today and the temps are supposed to stay in the upper 40s for most of the next week. I dont mind, but it sure is a wierd winter…um…well it will be if we see one. lol.
I am pretty well set for christmas now, although, Stacey and Dennis and Wiliiam will be coming out this afternoon, I still need to get some dinner going, we are having our christmas dinner tonight and having ham and all the goodies. I am looking forward to seeing the baby, as I havnt seen him since halloween. They grow so fast at this age. He is already 8 months old. Jacob is growing fast too. He is at that age where he is learning how things work too. He likes to open and close things and see how that happens..it is so neat to see his expressions when he figures things out…lol. well, as I have a million things left to do today, I will get off here for now, but I want to wish everyone a Very Merry Christmas and a Happy New Year!!!

Hello everyone, I have to leave in a few minutes to go to the office Christmas party. They are having it catered by Cattlemans steakhouse, so the food should be good…what I would love would be to see a little bonus, but dont expect it. Well, I will stop in and post a little later and let you know how it went…I just love parties though..lots of fun!
Well, the Christmas party was very nice! The food was really good and our bosses were really great and friendly and handed out gift trays full of cookies, a pie, a half ham and candies. It was really fun, we sang songs and talked and as far as office parties go, it was great! I am glad I work with a great group of people.
I have to get ready to go into work for real now..ugh. I ended up having to work christmas eve and christmas day..my 3-11 shift, so that really stinks, but we had a gal at work quit, so we were short handed and didnt really have another option. Well, we are having our christmas on this Sunday then. The kids are all coming over and we will open gifts and have a nice dinner. Well, I need to get going, you all have a great evening!

What a day it is today! We have gone from rain to freezing rain then back to rain and now snow…well, it is a mess out there. I have stayed in all day and not done much of anything really. I looked around at some sites online and cleaned and did some laundry and watched a couple movies. I got Jake down to bed early tonight..he was so sleepy. So it has been a quiet evening, which I needed.
I am feeling like I might be coming down with something, or maybe it is just that I am tired…not sure, but I feel kinda drained and achy. Hopefully it will pass.
I need to get some baking done tomorrow and finish cleaning the house, still lots to do…always is..lol.
I have had fun with my FCN Group I joined, we have been playing games and getting gifts and sending cards…it has been so nice knowing others are thinking about you. Its been great fun! I appreciate all of them and the thoughts and prayers they send.

Double Chocolate Sable Cookies

| Sable in French means “sandy” — these are a classic French cookie, made out of crumbly chocolate shortbread. To keep them nice and sandy, be extra careful not to overmix the dough. The hint of salt brightens the flavor and underlines the chocolate. For a special holiday treat, sandwich two of these together with a small scoop of peppermint ice cream. 3 ounces bittersweet chocolate, frozen for 10 minutes 1 1/4 cups all-purpose flour 1/3 cup Dutch-process cocoa powder 1/4 teaspoon baking soda 1/4 teaspoon fine sea salt 5 1/4 ounces (11 tablespoons) unsalted butter, softened 1 cup sugar 1 large egg yolk Grate the chilled chocolate with a fine grater or rasp and set aside.Whisk together the flour, cocoa powder, baking soda and sea salt. Beat the butter and sugar in a medium bowl with an electric mixer until just combined. Mix in the yolk. Add the dry ingredients to the butter and beat lightly together until just combined but still crumbly. Fold in grated chocolate with a spatula. Bring the dough together by lightly squeezing in your hands; but don’t knead or overwork, as the secret to these cookies is their delicate, sandy texture. Divide the dough in half. Lay half the dough on a long sheet of waxed paper and shape into a log along the width of the waxed paper, leaving some space at each end. Pull the paper over the top of the log. Grip the edge of the top piece of paper, and use a straight, firm edge, like a ruler or the edge of a pan, to press gently against the edge of the dough where the papers come together to create a solid, firm round log. Repeat with remaining dough and refrigerate for at least 1 hour. (To keep logs round store inside an empty paper towel roll.) Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Slice logs into 1/2-inch thick rounds with a sharp, thin knife. Divide rounds onto the prepared sheets, leaving about 1 inch between them, and refrigerate for 15 minutes. Bake until cookies smell fragrant with a full cocoa aroma and set on the outside, about 12 to 14 minutes. Remove from the oven and let cool on the pans, about 5 minutes. Transfer cookies to a rack to cool completely. Serve. Busy baker’s tips: Dough can be made and frozen for up to 2 weeks. Store baked cookies in an airtight container for up to 5 days. Baked cookies can be wrapped in plastic wrap, then aluminum foil and frozen for up to 2 weeks. Cook’s note: For super uniform cookies, place each sliced disk of dough in a muffin tin and bake. The cookies will be chewier, less sandy this way.

| 5 | tablespoons butter, softened |
| 1/3 | cup brown sugar, packed |
| 1 | cup flour |
| 1/2 | cup sugar |
| 1 (8 | ounce) packet cream cheese, softened |
| 1 | egg |
| 2 | tablespoons milk |
| 1 | tablespoon lemon juice |
| 1/2 | teaspoon vanilla |
- Heat oven to 350.
- In a medium bowl blend thoroughly butter, brown sugar and flour with a fork until mixture resembles coarse crumbs.
- Put 1 cup of the mixture aside for topping.
- Press remaining mixture into an 8×8x2 inch baking dish sprayed lightly with cooking spray; bake for 15 minutes.
- In another bowl combine sugar and cream cheese, mixing until smooth.
- Thoroughly beat in egg, milk, lemon juice and vanilla.
- Spread over the baked crust and sprinkle with remaining brown sugar mixture.
- Bake for 25 minutes.
- Let cool, then chill for at least 1 hour.
- Cut into 16 squares; serve.

Hello everyone! It sure has been a while since I posted, but boy have I been busy! My grandfather passed away and we had to go out of town for that, and I when I came home, I had over 500 emails to wade through…wow. The funeral for my grandfather was very nice! We will really miss him! I did get to see alot of family I hadnt seen in a while…and that was so nice! Boy did they all get old though! I guess I thought if I stopped aging they would too….LOL! I need to sit down and make up some Christmas cookie recipies for you as that was the last post I believe..lol. No rest for the weary. Well, I have been hearing and seeing accounts of people getting snow, and alot of it! Here in Kentucky, we are supposed to get up to 67 today…snow??? I don’t think we will be seeing it anytime soon…pout. I don’t like the mess snow causes on the road, but my goodness it is pretty to look at when you can stay inside where its warm and drink cocoa. I have been updating my page to look more christmassy, and decorating the house, which looks so pretty! Now, snow falling would really help to be in the mood for these Christmas songs I am playing..lol.
Today, I am going to stay in all day…this lady is going to do nothing all day but play on the computer and watch movies. I havnt rested for a whole day in I don’t know how long.
