I am so glad it is Friday! I am so looking forward to the weekend. It has been a very busy week at work. The International Truck show is in Louisville, and our hotel has been sold out. That means alot of checkins for me and alot of extra cleaning and running for extra towels and things. I have been so beat by the end of the day. I am glad we arent always like this. LOL.
I am thinking about buying a new laptop and thought I would run a quick survey from everyone to find out what laptop is the best one to buy. Now I am not talking $3,000 bucks good, but a good computer for my graphics stuff and pictures. If you have any ideas, let me know please.

Good Morning whoever may be out there. It is 11:24 am and I am just starting to get going around here. I slept in until 9:30 this morning…(I got into bed around 1 am) and did some dishes, and got some laundry going and picked up the toys from the front room, got some breakfast and decided to sit down with my coffee and read my emails and write a post and maybe visit some websites.
I got a new recipe in my email this morning that looked delicious, so I thought I would share it with you.
Rosemary Potato Frittata
2 servings
Start to Finish: 20 minutes
Ingredients
- 4 ounces tiny new potatoes, cut into 1/4-inch slices (1 cup)
- 1/4 cup chopped red onion or onion
- 1/4 cup chopped red, green, or yellow sweet pepper
- Nonstick cooking spray
- 1 cup refrigerated or frozen egg product, thawed or 4 eggs, beaten
- 1/2 teaspoon snipped fresh rosemary or 1/4 teaspoon dried rosemary, crushed
- 1/8 teaspoon salt
- 1/4 cup shredded Swiss cheese (1 ounce)
- Cracked black pepper
Directions
1. In a covered medium nonstick skillet cook potatoes and onion in a small amount of boiling water for 7 minutes. Add sweet pepper. Cook, covered, for 3 to 5 minutes more or until vegetables are tender. Drain vegetables in a colander. Cool and dry the skillet. Lightly coat the skillet with cooking spray. Return vegetables to the skillet.
2. In a small bowl combine egg product or eggs, rosemary, and salt. Pour over vegetables in the skillet; do not stir. Cook over medium heat. As mixture sets, run a spatula around the edge of the skillet, lifting egg mixture so uncooked portion flows underneath. Continue cooking and lifting egg mixture until it is nearly set (top will be moist).
3. Remove skillet from heat. Sprinkle with cheese. Let stand, covered, for 3 to 4 minutes or until top is set and cheese is melted. Sprinkle with cracked black pepper to serve. Makes 2 servings.
So there ya go, if you try it and love it, let me know. I am going to try it tomorrow morning and I will let you know how it turned out.
I am excited, our temps for the next week are in the 60’s and low 70’s!! yeah!! finally!! There is rain in the forcast, but at least it wont be cold! It is sunny this morning and cold tho, just 39 degrees. But it is supposed to be 64 today for a high.
Matthew my oldest son is moving into a new apt this week with his brother Andrew. They are both glad for the change of apts and that the freeloaders who were living with Andrew will be gone. Its a very long story that I wont go into now, but needless to say, it is a good thing that they are gone. The boys will have an upstairs apt with vaulted ceilings and they each have their own bedroom and separte bathrooms.

Well, here we are again. We got through another holiday. I love Easter, it is the first sign that spring is around the corner. I love the colors and the food. I also love to see people getting together to celebrate the meaning of Easter. He arose! I am so thankful that He did that for you and me. Where would I be if He hadnt.
It is Monday, and another work week begins. I like my job, but I would love to go back to being a stay at home grammy. One day maybe, but we have a big mortgage, and with todays economy, it is nearly impossible for any family to survive on one persons income.
I will be working on my pages in the coming days, as you can see I started with my blog first. I love this new set. I think I will be happy with it for quite a while. Well, until I find one I like even better…hmm..that will be tough! I am going to spring up the pages and make them full of color and fun things to see and do.

It has been another busy week. Some weeks it seems like I can get a lot accomplished, and other weeks, like this one, it seems like I have worked all week and done as much as I can and it doesnt look like I have done anything. Lisa has given me a few things from her grandmothers home and I have loving placed them in areas of my home. I loved her grandmother very much and know she would be proud to know I have her things displayed so nicely. And after all of this, and with spring starting to pop its head up, I think the mourning is leveling off. I know Lisa has had a very hard time getting through it all, I pray I have been a good friend to her and supported her enough. She says I have, so I am glad for that. I know she has been there for me many times. True friends are hard to find and so easy to keep once you find them. You can love your husband, and he can become your best friend, but a girl friend, one that sees you through everything, is a rare treasure.
I have started to truly realize just how much the people in my life that I call friend or family, are truly a blessing. All the support and love you recieve from each one becomes a tangible blessing…something to hold on to and not forget. I wonder, the ones that I talk to every day, the ones that know me and support me, am I returning the favor for them? Can they say that I am important to them? Not a selfish kind of thing, but to know that I am touching lives as thouroughly as I am being touched by others? I hope so. I want to be there on a daily basis for everyone that I know and for those I come in contact with at work and in the stores, and on the street….a simple smile and nod of the head lets that person know you see them and you are happy that you did. An acknowledement for a good deed…goes so far for some people. I always wave at the ones that move over as I am coming onto the freeway…not that I am forcing my way in, but they see me and wanted to be nice and let me in with no worries. That is a small act of kindness and they need to know it and be recognized. When someone lets you in line ahead of them because you only have one item and they have a cart full….how nice of them…and a thank you from the heart is so small a thing. I hold the door open a minute longer if I see someone coming right behind me…did that ruin my whole routine of the day…no. I was able to show kindness to someone and even if they dont return a thank you, I know they appreciate it, and maybe they will do the same for someone one day. The whole pay it forward is so real and true to me…I hope I can “pay it forward” many times in a day. It is good for soul and good for everyone you help or smile at. It may warm a very bad day for someone just to know someone really looked at them and genuinly smiled at them and made them feel good, if even for a moment.
Well there ya go, I have vacated the soap box once again and if you want to stand on it and let me know how you feel, go right ahead..it would make me feel good..hehe.

Hello everyone, sorry I havnt posted in a while, I have been so busy helping my best friend that I have lost track of time. My friend Lisa’s grandmother was put in the hospital after a stroke and I went to be with her and visit, well it ended up she had a brain bleed and didnt want to be put on life support, so Lisa and I ended up staying up there all night with her. She was in so much pain and I prayed God would deliver her from that, and so after several hours, she went into a diabetic coma and was out of pain. We stayed with her into the next day and watched her take her final breaths and go to meet the Lord. It was a sad, sad thing to experience, but I know that she is happier where she is at and out of pain.
Lisa did not have her mother or sister there with her, because her mother hasnt talked to her mother in over 9 years, and her sister does whatever her mother does. So, I stayed with her and her husband and two daughters, and we made it through it. The funeral was beautiful and Lisa’s mother and sister ended up showing up but sat on the far side of church angry and bitter because no one was consoling them or giving them flowers and gifts to take home. Do they not realize everyone there knew they estranged from her mother all those years and knew Lisa had taken care of her grandmother by herself, so deserved everything?? My goodness some people do not have a clue and are so selfish and wrapped up in themselves, they dont see how awful they are. I pray for them.
Lisa and I went yesterday and started cleaning out her grandmothers apartment. We got all her clothes packed up and taken to Good will. And got alot of other things packed up. We still have more to do, but it will wait until tomorrow as today, I need to rest. Lisa is just trying to keep going so she wont stop and think. I pray for strength.
Well, I have a lot to do around my house too…I have been gone all week and didnt do any laundry or cleaning, so I will be busy. But, I did have to stop in here and visit a bit.
I know we are all waiting for Spring and after that very big snow storm a lot of us have gotten, we really need it!
